Vineyard
Trellis training system, 30 years old, for Bonarda, and high trellis training system, 12 years old, for Cabernet Franc.
Soil: Alluvial sandy loam soils, with a strong presence of round and angular stones. The layers interspersed with loose sand provide excellent drainage. Above a certain height within the vineyard, calcium carbonate is found.
Irrigation: A drip irrigation system is used which, thanks to the permeability of the soil, allows control of the vigor of the plant during the vegetative cycle.

Total acidity: 5.5 g/l
Alcohol: 13%
Altitude: 650 m above sea level
Harvest: Manual in 20 kg boxes, avoiding fermentation in the cellar.
Maceration: Pre-fermentation for 48 hours in cold concrete tanks.
Fermentation: Classical vinification at 25°C with selected yeasts, daily pump-overs, and natural malolactic fermentation in concrete tanks, without oak aging. 85% of the total quantity was whole cluster fermented.
Tasting notes
Color: Intense red, with violet highlights and purple reflections. Clean and bright.
Nose: Mineral notes, fresh red fruits, plum, floral and fruity hints appear. Menthol and spicy nuances are also perceived, such as thyme, white pepper and bay leaf.
Palate: Pleasant entry, medium and round finish. Medium acidity, with youthful tannins that make their presence felt on the palate.
