The reason for the name
The name Red Jaw represents the alligator's burning heart, its silent power, and its ancient instinct.
The “jaw” is the point where inner fire meets life; the boundary between strength and calm.
This Caiman Edition pays homage to the resilience of beings that survive the passage of centuries, just like this wine, born among volcanic stone, altitude and patience.
A work that breathes fire, time and mountain.
Tasting Notes
Deep red color with dark violet reflections.
Intense aromas of ripe black fruits, violets, cocoa and graphite, with a mineral background and a subtle touch of toasted oak.
On the palate it is powerful and elegant, with enveloping tannins and a persistent finish reminiscent of volcanic stone and damp earth.

Burgundy-style bottle, with a textured red leather label, a symbol of strength and adaptation.
Each bottle includes a metal pendant with the emblem of the alligator, guardian of time and fire.
Vineyard
Sandy and stony soils with a volcanic stone base and natural drainage.
Sustainable management, without herbicides, with drip irrigation and controlled sun exposure.
Hand-harvested in 20 kg baskets, with double selection of bunches and berries, removing any plant matter or impurities to preserve the purity of the wine.

Sandy soils, with clay, shallow and permeable.

Malolactic fermentation
Natural in French oak barrels.
Breeding
24 months in first-use French oak barrels, with medium toasting and volcanic stones that regulate micro-oxygenation.
Stowage
24 months in the bottle under constant temperature, guaranteeing its slow and refined evolution.

Only 3% of Argentina's grapes come from this region. From there, we select, one by one, the best grapes to create a wine that embodies the strength, precision, and patience of time.
