Vineyards
The vineyards are located 680 meters above sea level, in a temperate climate; the area has a large annual temperature range, favoring the vegetative rest of the plants and their development.
Harvest
Manual in two installments, February and March.
The bunch must not lose its integrity.
Fermentation
Finished with indigenous yeasts in stainless steel tanks and a percentage of second-use American oak barrels, separating the varieties in different tanks.
Temperature 15 °C and 18 °C.
Skin maceration for 3 hours, then we separate the must fractions and proceed to ferment without skin.

Le Combat: An organic and vegan wine that celebrates elegance with responsibility. Made sustainably, this wine respects the environment and honors Mother Nature.
Maturation
The wine is kept in stainless steel tanks and a percentage in second-use American oak barrels, leaving a slight fine lees that protects the wine.
Malolactic fermentation in a small percentage.
Tasting notes
Visually, it presents a bright lemon yellow color with golden highlights.
On the nose it presents floral notes, melon, tropical fruits, grapefruit and a coconut and butter finish due to its short time in wood.
On the palate it is balanced, fresh and round, with prominent sweet notes and a good acid balance. The finish is persistent and well-rounded.
Winemaking (final text)
Winemaking with native yeasts to preserve the purity of the terroir and highlight the natural expression of Malbec.
Fresh, vibrant and minimal intervention wine, made using sustainable practices.
