Winemaking (process)

To obtain the base wine, a cold pre-fermentation is carried out in stainless steel tanks, with the addition of enzymes, nutrition and selected yeasts.

Fermentation time: 20 days at 13–16 °C

Second fermentation: 20 days at 13–16 °C

Aging: 3 months on “fine lees”.
