Vineyards
The vineyard, trained on a high trellis system, is 30 years old and located at 1,100 meters above sea level in alluvial sandy loam soils with a high concentration of round and angular stones. Interspersed layers of loose sand provide excellent drainage. Calcium carbonate is found at higher elevations within the vineyard. A drip irrigation system is used, which, thanks to the soil's permeability, allows for controlled vine vigor during vegetative growth and grape ripening. During the ripening period, the temperature range is 14.4°C. This combination of cool climate and warm soils results in wines that are intense on the nose, elegant on the palate, and with moderate alcohol content.

Winemaking
Hand-harvested in mid-April, bunch selection on a conveyor belt, pre-fermentation maceration in a stainless steel tank for 4 days at 8–10 °C.
It is then transferred to a 2000-liter concrete tank to begin fermentation. Fermentation takes place with selected yeasts at 25-29°C, with daily pump-overs and two rackings during the fermentation process.
The wine is racked and pressed in vertical presses at 1000 and 2000 liters. Malolactic fermentation is then carried out in tanks.
Aged in oak barrels for 12 months. Before bottling, the wine is naturally clarified without the use of filters. Cellaring time: 5 months.
