Vineyard
Vineyard:
Both varieties are grown in a trellis system, allowing greater aeration of the bunches and their protection thanks to the leaf surface.
Floor:
Alluvial sandy loam with a strong presence of round and angular stones. The intermixed layers of loose sand give the soil excellent drainage; above a certain height within the vineyard, calcium carbonate is found.
Irrigation:
A drip irrigation system is used, which, thanks to the permeability of the soil, allows us to control the vigor of the plant during the vegetative development and ripening of the grapes.

Harvest:
Canari: manual at the beginning of March.
Pedro Ximenez: early April.
Maceration:
Pre-fermentation maceration of 12 hours in a pneumatic press, with inert gas protection and with the addition of dry ice.
Fermentation:
A pre-fermentation cold racking is carried out for 48 hours, and the fine must is fermented in stainless steel tanks with selected yeasts between 14 and 17 °C.
Tasting Notes
Color: delicate golden yellow color, with green highlights.
Nose: marked aromas of pome fruits such as pears, apples and quince stand out, with delicate touches of citrus fruits and a marked floral aroma.
Palate: very balanced, unctuous, young and fresh, bright acidity with marked character and a pleasant finish.
